Blessings and More Bakery

Looking for something to hit your sweet spot. You don’t have to look far because Bridgit Melton-Williams, owner of Blessings and More Bakery, is open for business right here in Pawnee!
Bridgit shared how she got started. “I had a home bakery for a while then decided I wanted to do it fulltime. I worked with the Small Business Development Center in Springfield. They were extremely helpful,” she added.
Blessings and More Bakery is a new business. “My first opening day was in June of 2024”.
Baking was part of growing up for Brigit and she has been interested since she was a kid. “I grew up baking with my aunts in Springfield.”
This childhood experience led her first to open her home baking business, then her food truck, Blessings and More Bakery. When asked what she makes, she said, “I baked all kinds of things, I don’t think there is anything I haven’t baked. Cupcakes are my favorite, but brownies and cheesecake are my biggest seller. I do all my baking in the trailer it has a commercial kitchen.”
Blessings and More Bakery is more than just a baking business though Bridgit opened this as a faith filled business with plans of making a difference in people’s lives. “I have always loved to bake and was baking for Sunday morning fellowship. Then I saw a movie Sweet Inspirations where a church group opened a bakery to save a local woman’s shelter. This made me think of
opening a non-profit bakery.”
While she said that she is not registered as a non-profit, she works with charities by donating 10% of her proceeds and 100% of her tips to a local charity. The charities vary each month. She has received some heart felt feedback. “I have received a few thank you letters. I took the trailer to WCIC during their fund raiser. I am always looking for more opportunities to share with others.”
Bridgit said her Bible verse that spurs her on is 1 Corinthians 10:31 “So whether you eat or drink, or whatever you do, do it all for the glory of God.”
Opening last June, Brigit said, “My first big event was the Pawnee Prairie Days, then next was the fireworks was at the Pawnee Assembly of God. I was still new at that time.”
Currently she doesn’t have a regular schedule but is busier attending events in the warmer months. However, she does take orders and can provide you with sweets for your special day, and she is accepting orders for Valentine’s Day up until February 11th.
“For Valentines Day I am offering a mixed box. You can order a Variety Box for $40 with a choice of three Brownie, Blondie Cookies, Cherry Kiss Cookies, Strawberry Fidge or Chocolate Chip Cookie. You can also order Chocolate Dipped strawberries with white, milk or dark chocolate. A 3 pack is $12.00, half a dozen is $20.00, and a dozen are $40.00. Another choice is 7 oz. of Cupid mix, which is like a puppy chow mix for $8.00.”
Taking special orders for events, Bridgit said, “Last year did a few cupcake orders for graduation. I would love to do more. In March I will be at a Woman’s Entrepreneurs Expo at the Crown Plaza. To find more upcoming events, go to my Facebook Page.”
Knowing everyone has a sweet tooth, Bridgit said the hardest aspect of baking is, “Figuring out how much to bake, its easy to bake too much.”
While that is the hardest part, the favorite part of the job for Bridgit is the people’s reactions. “When I hand out a brownie and they see how big it was, then if they tell me, it was good.”
A people person Bridgit added, “I like meeting people and talking to them through the window. She recalled one of her favorite memories. “There was a random daycare in Springfield that reached out and asked if I could show the daycare kids the truck. Only two were old enough to come on, then a few weeks later I did a Trunk or Treat event and one of the kids remembered me,
that really touched me.”
The local daycare had the right idea, a cool view inside a food truck, something many of us wonder about! “Before this I had never been inside a food truck either,” Bridgit shared.
She found her food truck on a website, and she dove into the business with a few additions. “I found this one in Alabama. I ended up getting a loan to open the business and had to buy a pickup truck to pull it.”
After purchasing the truck, to make it her own she had Ace Sign do the graphics. “The business development center helped me with the business and paperwork. The rest I learn as I go.”
Besides herself, Bridgit has a 15-year-old daughter Alivia Melton, that is a freshman at Pawnee high. “We moved here before she started kindergarten,” Bridgit added.
It was a good move. “Pawnee has been amazing, very supportive. I have had a few businesses open their parking lot. A lot of people share my posts and my Facebook posts. I want to give a huge thank you I get so much support.”
